Lechon
The ultimate Filipino celebration food—crispy on the outside, juicy on
the inside.
Lechon (roasted pig) is the centerpiece of fiestas, weddings, and
holidays. While whole lechon is usually for special occasions, Lechon
Kawali is a popular home-style crispy pork belly alternative.
Ingredients:
- 1 kg pork belly
- 1 tbsp salt
- 1 tsp peppercorns
- 4 cloves garlic, crushed
- 2-3 bay leaves
- 2-3 bay leaves
- Water for boiling
- Oil for deep-frying
Steps:

1. Boil pork belly with salt, peppercorns, garlic, and bay leaves for
45–60 minutes or until tender.
- 2. Let the pork dry completely (best if chilled overnight).
- 3. Deep-fry the pork until golden and crispy.

4. Slice and serve with liver sauce (lechon sauce) or vinegar dip.
